Under the Food Code, what is the total time allowed to cool cooked food from 135°F to 41°F?
How hard is the food manager exam?
The exam tests rules you can learn, but many of them are exact numbers, and several choices often sound sensible. Candidates who know the Food Code's temperatures, times and illness rules cold, and practice choosing the one answer the Code supports, do best.
| Pace | About 85 seconds a question (85 in 2 hours) |
|---|---|
| To pass | A scaled score of 75, set for each exam form |
| Largest area | Preparing foods, 20% of the blueprint |
| Retakes | Two attempts in 30 days, then a 60-day wait |
What makes it hard
- Exact numbers: 165°F, 155°F for 17 seconds, 145°F for 15 seconds, 135°F, 41°F, 2 and 6 hours, 7 days.
- Similar rules that differ by one detail, such as restricting a worker with a sore throat and fever but excluding one who is vomiting.
- Manager judgment: what to do first in an emergency, when to notify the regulatory authority, and how to respond to an illness complaint.
- Areas people skip, such as backflow, air gaps, lighting and pest control, which together make up 15% of the blueprint.
How the score works
The National Registry sets a raw pass mark for each exam form from how hard its questions are, then converts it to a scaled score of 75. Its FAQ says a scaled 75 does not mean 60 of 80 right: the number needed can be higher or lower depending on the form.
How to check you are ready
Take a timed practice test and look at your result by area, not just the total. Fix the weakest area first, then sit a full 85-question practice exam on the 2-hour clock.
